Maya's concept since the beginning was to change the menu daily, use the freshest products available and to keep things simple and clean. There are five or six appetizers every day; usually a soup, three salads and a ceviche or tartar or carpaccio of fish. The main courses always include two fresh fish, usually local mahi-mahi, wahoo, red snapper or yellow fin tuna, sometimes imported salmon, turbot or sole. There is shrimp, the local langouste, calamars, and chicken dish, and some kind of red meat, beef or lamb. All the main courses are served with vegetables. The desserts are constant, Maya's chocolate cake, orange cake and coconut tart. We make sorbets and ice creams as well.
